An Autumn Morning in Stamford

Visitors to the Britain very often focus on London leaving the rest of the country and its offerings unexplored. Britain has several charming historic towns and villages which are well worth a visit. Stamford in Lincolnshire is one such medieval town with some of the finest Georgian architecture in the country. It is only down the road from where we live and I happened to spend a morning there at a photography workshop. Here are some snapshots of a cold Autumn morning in Stamford. Also, I can now converse in aperture and depth-of-field speak with rest of world.

Shoefatuation: Meet Kobi Levi

Exactly 3 days ago, I discovered Pinterest through a uni mate's blog. Now I'm officially hooked. Whereas before I scoured magazines and the Internet for hours to find inspiration, now its so much easier to find what you want. Through one such Pinboard I discovered Kobi Levi and I am smitten by what this man creates. I believe it is the second coming of Shoe God. If you don't believe me, see for yourself. Charity Shops: Sue Ryder Thorpe Hall

If you thought charity shops were housed in dinghy little buildings or bland high-streets, you must visit the Sue Ryder Thorpe Hall shop. Despite living in the area for a good few years, I always assumed Thorpe Hall was a wedding venue and so never really ventured in. However, I very excited to recently discover that it housed a Sue Ryder hospice and a charity shop. Such a perfect reason to write about a great shop, a great cause and also help my readers make some fab shopping savings!

The Sue Ryder shop is quaint and compact with very friendly staff. And yet, it housed a vast volume of truly beautiful china, vintage glassware, pottery, good quality clothing a even a few great books. My favourite items were an Orla Kiely style jacket that was in mint condition, a very quirky taxi brooch that has made my trinket box its new home, lovely and a some pretty sparkly ballerinas. I even found some classic books that were being sold for an absolute bargain.

Whilst on the subject of the shop, I think it is worth mentioning the charity itself and its inspirational founder. To quote wikipedia, "The Sue Ryder charity has been supporting people with complex needs and life-threatening illnesses for over fifty years. The charity supports people living with conditions including cancer, multiple sclerosis, dementia and stroke at 7 specialist palliative care centres, 6 care centres for people with complex conditions, 15 homecare services and a growing portfolio of tailored, community-based services." By shopping at the Sue Ryder charity shops, you are helping support a very worthy cause.

Whilst writing this post, I also read up a bit more about Sue Ryder herself. A truly amazing lady, she started her caring career volunteering at the First Aid Nursing Yeomanry during World War II at the very young age of fifteen. She spent a her post-war years undertaking more relief work before eventually establishing the Sue Ryder Foundation in 1953. Sue Ryder was a woman of faith and that helped her on her journey to provide help and care to thousands that desperately needed it. If you are interested in learning more about her work, it may be worth contacting the Sue Ryder folk who I'm sure would be happy to tell you more!

This is your place if you are looking for vintage china, good quality ceramics, wedding and mother of the bridge outfits and stunning silverware. Whilst stock at the shop is likely to vary and is dependent on donations, I have a feeling that this shop gets some truly unique and generous donations. More importantly, all donations stay there so they don't get shipped to any other store.

Squid Ink Risotto with Roast Vegetables. Caution: Not for the faint-hearted!

I really can't remember where or when I got the idea of cooking with squid ink. It was sometime early 2008 and I remember looking for hours in shops and online for a bit of squid ink. I finally bought it off Rick Stein's website and paid four times the cost of the product for delivery. My first experiment back then went quite well and I served the risotto with some homemade Greek style yogurt and peppers. Now that we have a lottie and enough veg to feed the city, I decided to cook a simple recipe with an assortment of veg. I must admit that not all offers to cook this at dinner parties were accepted. Shame really as it does have a special flavour. Anyway, here is the recipe.

Ingredients:

Squid ink

250g risotto ( 4 servings)

2 cups chicken stock-use 1 cube

1 Courgette

1 Aubergine

1/2 Acorn Squash

Onion
3 large tomatoes

Method:

Heat a bit of olive oil in a pan and add the risotto and fry for a couple of minutes. Add the squid ink and continue to fry. Now add stock and stir until the risotto is smooth, creamy and cooked. Meanwhile, chop and season the vegetables and roast them. I like spicing my veg but you can do whatever you like really. Serve the risotto topped with roast veg. Finito!

//hunting: turkey edition//

Several weeks ago we had the opportunity to go turkey hunting in Seymour, Iowa. Pastor Stanley arranged an awesome hunt for us. It was our first time turkey hunting, and we loved it! What could be better than getting up early (3:30), covering yourself with camo from head to toe, heading out into the dark, and finally shooting several nice turkeys?

We split up into three parties and hunted different ground. We were rewarded with two nice turkeys. Above, Carson, Mitchell, and Taylor pose with the one Carson shot. When he texted us the picture, told Dad, "He looks SO thrilled!" And he was.

Here's Taylor with one of the birds. They weighed in at about 14 and 18 pounds.

Easy Avocado Ice cream Recipe

A couple of weeks ago I tweeted my desire to make avocado ice-cream with edible flowers. I finally got to make it this week and the result was absolutely divine, even if I say so myself. Here is how I made it.

Ingredients:
4 avocados
300ml whole milk
150g caster sugar
1 vanilla pod
Juice of 1 lime or 4 tbsp bottled lime juice

Method:

Chop the avocados and blend them into a fine paste, adding 150 ml milk. In a saucepan add the sugar, lime juice and vanilla pod and bring to a boil. Cool the mixture and remove the vanilla pod. Add the sugar mixture to the avocado puree in a large bowl. Now Add the remaining milk. Freeze the mix in an airtight box. Whisk with a blender or fork every few hours to ensure a smooth consistency and to reduce crystallisation. The ice cream is ready to eat as soon as it is frozen. It takes less than 30 mins to prepare and a few hours to set. Alternatively, use an ice-cream maker for more instantaneous results.

Note: Before you freeze the mixture, taste to see if you are happy with the flavour. Adding some extra lime juice/ sugar mixture increases the depth of flavour and you may choose to do so.

Whilst my original idea was to add chocolate or edible flowers, the ice-cream is best served without anything else.
